The star-awarded restaurant used to be the meeting point of Hamburg’s high society. But then a fire destroyed the complete interior of the gourmet temple in June 2018. After an extensive restoration, Le Canard nouveau re-started with a new concept and new brilliance.

With Norman Etzold there is only a new chef – and he not only brings a light breeze but fresh wind to the Elbchaussee. The Thuringian cooked a Michelin star in Vienna and is aiming to repeat this in Hamburg – but he wants everything to be much more casual, approachable and affordable as in the old Canard nouveau: “It is absolutely crucial for me that everyone is welcome here. I greet all in the same manner – whether they come in a t-shirt or a fancy shirt”, states Etzold. His cuisine is product oriented, without frills and with many green flavors and matches this idea.

The new design is also free of frills. The interior presents itself more friendly, lighter with less wood and material mix as before. Instead of pear wood paneling, the white walls now features sketches by star architect and owner Meinhard von Gerkan. Clear lines also regarding the furniture: Simple tables with white setting and elegantly reduced chairs by Freifrau mark the new image.

“This place is too nice to only be enjoyed by gourmets.” Norman Etzold
