Beau Clugston, who grew up in Australia and who worked as a chef for the Nova as well as in Paris, says there are no rules for his food.

Except for one: the best ingredients one can possibly find. Clugston’s cuisine is all about fish and seafood, Norwegian mussels and seafood, ricotta with oyster granita, sea urchin from the Faroese Islands. Heavenly!

The design of his place though is simple, to-the-point and rather earthly. It is all about the food here, not about being fancy.

Beau Clugston is especially proud of the hand made paper flowers made by Louise Moestrup for the Iluka.
