The address in Destelbergen in the Ghent metropolitan area is quite far off the beaten track. That speaks for the courage and self-confidence of brothers Ruben and Pieter De Maesschalck, who cook here: sophisticated dishes that convinced Gault Millau, such as leek tempura with basil cream, fillet of Anjou pigeon, briefly smoked and lacquered with miso, or langoustines in a bergamot-infused beurre blanc with kohlrabi and rhubarb. The design explains the restaurant name: Brown and earth tones define the color scheme. The eye-catcher is the open kitchen.
