With his Milos restaurants, Costas Spiliadis, who emigrated from the Greek port of Patras to New York at the age of 19, has not only created an international gastronomic empire since 1979, but has also saved the honor of Greek cuisine worldwide.

In 2022, Spiliadis opened his first hotel in Athens. It follows the maxim of his restaurants: only perfection is good enough. Divercity Architects and Carole Topin are responsible for the design. The total of 43 rooms and suites, inspired by Cycladic art, are housed in two landmarked neoclassical buildings connected by a glass annex.
