This restaurant, which has been awarded a green Michelin star, is unusual in many respects. For example, it is an exemplary zero-waste establishment.

The environmental philosophy behind it is also reflected in the design approach – some of the furniture is made from the self-grown and biodegradable material mycelium, a mushroom that is not far removed from those dishes that are served here.

For the sake of the environment, Studio Nina+Co further used seaweed, recycled plastics as well as glass. The once commercially used space is thus transformed into a sounding board for more mindfulness in dealing with nature. Surface materials and pleasant haptics played a special role in the sensitive use of these materials.

All products are delivered to the restaurant in reusable containers. The minimum remaining waste is natural and therefore fully compostable
