Color blocking turned restaurant: when pink and red carpets meet yellow leather chairs and sofas with lots of greenery around them, an explosion of color is part of the concept.

Designers John Pawson and François Champsaur have filled an otherwise white room with color that would hardly have matched chef Enrique Olvera’s cuisine without the pops of color. Here, the celebrated Mexican passionately combines the cuisine of his homeland with Spanish cuisine.

His talent is undisputed. Olvera’s Pujol restaurant in Mexico City is one of the top 50 restaurants in the world.

Fun fact: The restaurant is named after the Spanish painter Jerónimo Antonio Gil, founder of the Academia de San Carlos in Mexico City
