A test for future top chefs and waiters: L’institut Restaurant- École Paul Bocuse functions like a regular brasserie and allows students to prove their skills. Legend Bocuse also runs the practice hotel Le Royal in the neighborhood. Of course the interior was also designed by a Frenchman: Pierre-Yves Rochon is a specialist for luxury hotels and restaurants and L’ Institut is somewhat his baby as he was deeply involved in its establishment, opened from Tuesday to Saturday.
