You will certainly not experience any fiascos here. In the contrary: Henri Alén delights with daring creations in his restaurant in Helsinki’s center. He describes the applied method as follows: “Fresh herbs, a touch of craziness and a lot of love.”

The result is dishes like rabbit liver with spring vegetables, lamb with grilled lettuce and bone marrow sauce or liccorice mousse. During the pandemic, the Ultima moved towards Italian cuisine following the idea of “if we cannot travel to Italy, we will just bring Italy here.”

The lovely dining creations are served in an environment that is just as lovely and thought through. Most striking are the indoor greenhouses for the herbs used in the kitchen. Studio Ateljé Sotamaa is responsible for the interior design.

Its light inventions are almost magical: Glass balls, in which crickets live, or light columns that react to the movement of people passing by. The innovative design of Studios Ateljé Sotamaa can also be seen in Alén’s second restaurant, the just as innovative Finnjävel Sali in Helsinki’s Art Gallery.

On first sight, the sculpture by Kivi Sotamaa under the ceiling looks like a pre-historic skeleton. Only when taking a closer look it becomes clear that it is a rabbit jumping across the room.
