“Väkst“ is Danish and means ‘growth’. The restaurant of the same name lets the restaurant scene of the Danish capital grow beyond itself.

After the Noma, awarded as the world’s best restaurant multiple times, and many other innovative culinary places, such as the ‚best design restaurant’ Höst, connoisseurs now pilgrimage to the Väkst. A greenhouse is the center piece of the restaurant.

The restaurant is part of the Cocofo Group, as are the Höst and the Cocofo Restaurant. It stretches across two sun-flooded floors. The generous use of glass and plants makes guests feel like they in a garden in the middle of the city.

Almost all materials have patina. The shelves at the bar stem from the national museum in Brede, the window frames in the greenhouse were made from floor boards of an old factory in Hunsballe and the large lamp shades used to be milk cans.

Of course, the restaurant serves New Nordic Cuisine. Fresh vegetables are the main focus of the cuisine – but the chefs are not dogmatic about and also cherish grilled steaks.

The chairs “SP34” have been named after the hotel and its own brand. They have been designed according to the models found in the basement during the renovation.  The tables in the basement as well as the chairs on the upper floor are by Københavns Møbelsnedkeri.
