At Giesebrechtstraße 3 in Berlin’s Charlottenburg district, Michelin-starred chef Björn Swanson is realizing his dream of opening his own bistro. SWAN&SON offers culinary diversity in an ambience reminiscent of the late 1960s and early 70s. Architecture studio Boucherie + Vollmert designed the space with clean lines, retro chic and natural materials – without drifting into kitsch. Located in a listed Wilhelminian-style building, the bistro with its 75 seats offers an elegant stage for dishes that reinterpret classics.

The menu ranges from “Falscher Hase” with Périgord truffles to Wiener schnitzel and innovative creations such as the “Boston cream donut with caviar”. The “hidden room” – a separate room with its own entrance for discreet occasions – ensures exclusivity. Swanson – influenced by Berlin’s Michelin-starred gastronomy – emphasizes craftsmanship and relaxed service. His approach: top quality without being elitist – a philosophy that has already earned him a Michelin star with the FAELT.

The design of the SWAN&SON emphasizes the combination of retro style and contemporary elegance. Light colors, minimalist shapes and fine materials create an understated, stylish atmosphere. The bistro promises to be both a meeting place and a retreat – for Berliners who want to experience the tradition of the West in a new way.
