The waiting is over: After Noma, crowned four times as the world’s best restaurant, closed its doors at the end of 2016, chef René Redzepi opened the flagship of the Nordic cuisine for the second time in February 2018.
The star chef and his team of 80 were not resting during this time though. In the contrary: the Nordic crew was busy looking for a new location as well as for inspirations for Noma 2.0.
The new gourmet temple is located in the free town Christiania and something like an urban farm with farmer, garden and green house. Consequently, the renewed concept is even more regional and seasonal in order to assure that the best ingredients are alway at hand.
At Noma, the year is split in three seasons: February marks the start of the season for fish and seafood, June to September are the season for vegetables and October means the start of the game and forest season.
