Nolla is the Finnish word for zero and exactly that is what Albert Franch Sunyer, Carlos Henriques and Luka Balac want to be: a zero waste restaurant that produces no garbage, none!

That is why everything is completely processed here; what remains is composted and turned into fertilizer that goes back to the producers of the produce. These are strictly regional and are only allowed to be delivered without packaging. Napkins are made of recycled plastic bottles, the glasses of water bottles that are collected at the Finnish presidential palace, the handmade chairs are made of old walnut trees.

Indeed, there are no trash bins here. And the Finnish cuisine served here is everything but a zero.

The Nolla serves its own craft beer, organic wines and selected alcohol-free beverages from a sustainable manufacturer with the meals.
