Denmark meets South Korea. This motto underpins the entire Koan restaurant concept, from the design to the cuisine. It can also be seen as a tribute to the Korean origins of Danish chef Kristian Baumann.
The first thing that catches the eye upon entering is the ceiling-high wall unit made of ash wood and rice paper by Mathias Tolstrup. It is both an art object and a shelf, with wine glasses stored behind its sliding doors and a striking pattern inspired by Korea. This contrasts with the simple design of the tables and chairs by Danish Brdr. Krüge.
The signature dish, “White Kimchi,” is served in specially crafted porcelain featuring motifs from the Chinese Ming Dynasty.
