Copenhagen’s Norm Architects worked on a new flatware edition for Menu for three years. Afterwards, there were so much into the topic of Nordic culinary culture, that they developed a restaurant concept in cooperation with the Cofoco chain.
As is common in the Nordic cuisine, the presentation of meals in the Höst tells a story about the origin of the food. Sometimes you find stones, clams or burning juniper twigs next to the refined, Nordic dishes on your plate.
For the interior, Jonas Bjerre-Poulsen and Kasper Rønn reflected on classic materials of a farm and translated them into today’s world. Loads of wood, raw walls, plants and lots of patina bring the coziness of country life into the urban environment.
At in 2013, Höst was awarded the prize for the world’s best design restaurant.
