Since four years, Hiakai is busy exploring and adapting Maori cooking techniques and ingredients. The sophisticated meals by chef Monique Fiso challenge the status quo of the Maori cuisine and play a leading role in preserving this culinary culture.

Hiakai is a stationary restaurant in Te Whanganui-a-Tara, Wellington’s harbor. The potential is undisbuted: The Maori who immigrated from the South Seas developed their own style of earth cuisine (Hāngi) and adapted plants and vegetables to their new surroundings.

Over several centuries, these methods were handed down, refined and still feed New Zealand’s population today.

The restaurant was crowned as one of the 100 greatest places of the year 2019 by “Time” magazine
