Heston Blumenthal is one of Britain’s most famous chefs. His French restaurant “The Fat Duck“ in Bray, Berkshire, is one of the few three-star restaurants in England. In his two Michelin star restaurant “Dinner” in London, he explores the gastronomic past of the United Kingdom.

On his search for recipes, Blumenthal was consulted by food historians and scouted threw old cook books in the British Library. What came out is a menu that not only rediscovers the royal cuisine of Richard IInd or the Tudors, but also catapults the recipes directly into the present with his unique way of cooking.

The interior of the restaurant is also historically inspired: materials like iron, leather and wood or the porcelain wall lamps in the shape of antique pudding dishes remind of ancient craftsmanship and the open view onto the Hyde Park creates a stunning atmosphere.

Blumenthal’s Signature Dish named Meat Fruit: The recipe based on a meal from Henry VIIIth royal court is a fine chicken liver pie but looks like a mandarine.
