The BBR has been an integral part of the Raffles Singapore for 120 years. Originally a club, the restaurant is still located in the historic Bar & Billard Room of the magnificent Colonial style hotel built in 1887.
Of course the appearance and the culinary concept of the BBR have changed over time. Today, world famous star chef Alain Ducasse is responsible for the restaurant and serves a contemporary cuisine that is inspired by Mediterranean flavors.
The interior is just as contemporary. The Mediterranean also seems to be a source of inspiration here: The impressive blue sculpture stretching over the open kitchen reminds of a huge fish moving in the sea.
