Working with SPACE has been paramount for us. From day 1, they understood our vision and their work has complemented everything that we do”, raves the founder of Noma, which has been decorated ‘Best Restaurant in the world’ several times. Not surprising that René Redzepi teamed up with Signe Bindslev Henriksen and Peter Bundgaard Rützou for the design of his new restaurant.

You can still recognize the formal life as an industrial storage space of the 108 restaurant. The cool concrete hall received the typical Danish coziness via custom-made pieces and designs and the subtle color concept by Space Copenhagen. Further moments of happiness are enabled by chef and co-founder Kristian Baumann’s creations. He continues to pursue the principles of Noma here – just in a more casual and affordable manner.

Courage to try something new! Not every meal on the menu sounds as crazy as caramelized milk skin with grilled pork belly and cress or grilled monkfish with cabbage cooked in chamomile, green summer vegetables and clam sauce. Yet, the restaurant is all about the joy of experimenting.
